We have deliberately chosen to work with aquavit because we see it as part of the Danish spirits heritage, which unfortunately has been somewhat forgotten and not developed much in the last 100 years. We have chosen to pick it up, dust it off, and take it in completely new directions, not only in Denmark but also in the wider world.
